BASIC PANCAKE BATTER

What you will need:
1 1/4 c. sifted All-Purpose Flour
2 1/2 tsp. Baking Powder
3 tbsp. White Sugar (or less)
3/4 tsp. Salt (or less)
1 Egg
3/4 c. Milk (or more if you like moister pancakes)
3 tbsp. melted Butter, Margarine, Oil or Shortening

Directions:
Dump everything into a bowl (egg and butter last) and beat a bit, but not too much; batter should be a little lumpy. Pour onto medium-hot, non-stick or well oiled cast iron griddle. When bubbles begin to form on top, flip over and brown on bottom.
* 1100 calories for whole recipe. Keep fat to a minimum to keep calories down!
