PINEAPPLE CHICKEN

What you will need:
8 Chicken Breasts, Legs, or Thighs

1 can Crushed Pineapple

1 Orange

1 small can Mushroom Pieces

1 tsp. Soy Sauce

1 1/2 tbsp. Cornstarch

1 Green Pepper, sliced

 
Directions:
Arrange the chicken breasts in a shallow baking pan. Bake for 1/2 hour at 350F. Combine the undrained pineapple, mushrooms, soy sauce, the juice and any pulp of the orange in a small saucepan. Heat and thicken with cornstarch dissolved in approximately 1/2 c. or cold water.

Spoon thickened mixture over chicken breasts. Return to oven for another 30 minutes or until fork tender.
