HOLLANDAISE SAUCE

What you will need:
1/4 lb. Butter

2 Egg Yolks

1 tbsp. Lemon Juice

1/3 c. boiling Water

1/4 tsp. Salt


Directions:
Separate butter into three equal portions. Put one portion into pan with egg yolks and lemon juice. Mix well, cook over low heat, stirring constantly until butter melts. Add second portion of butter and as mixture thickens, add third portion. Add water and seasoning. Cook 1 minute.
