CARROT SOUP

What you will need:
2 tsp. Vegetable Oil

1 lb. Carrots, thinly sliced

1 large Onion, chopped

2/3 c. chopped Celery

1 1/2 c. diced Potatoes

1 clove Garlic, minced

1/2 tsp. Sugar

4 c. Chicken Broth

Fresh ground Black Pepper 

Directions:
In a large saucepan, heat oil. Add carrots, onion, celery, potatoes, garlic, and sugar. Cover pan and cook vegetables over low heat for about 10 minutes, stirring occasionally. Add pepper and broth, bring soup to a boil. Reduce heat and cook soup, partially covered, for 20 minutes or until vegetables are soft.
