SIMPLE BEEF GOULASH

What you will need:

2 lb. (1kg) Beef Brisket, Cross Rib or Short Rib Pot Roast, cut in 1 inch (2.5cm) cubes
OR stewing cubes
1 pouch Onion Soup Mix (approx. 38gr)
2 tbsp. (30ml) Paprika
1/4 tsp. (1ml) Caraway Seeds
10 oz. can of Whole Mushrooms (do not drain)
1/4 c. (50ml) Quick-cooking Tapioca
(tapioca may be substituted with 1/4 cup cornstarch or flour with 1/4 c. water to make a paste)
Cook paste in pre-heated pan until it boils and thickens.
8 c. (2L) chopped Vegetables, cut into small chunks.

Directions:
Place ingredients plus 1 1/2 c. water in a 4 quart slow cooker. Stir, cover and cook on high for 5-6 hours (or on Low for 10-12 hours). Serve goulash with dumplings or hot cooked noodles or rice. Makes 8 servings.


Per Serving: 280 Calories, 23g Protein, 8.8g Fat, 28g Carbs.

Notes: I like to put my goulash on mashed potatoes.
